First of all, I’d like to say happy holidays to everyone! At this point, you’ve either gotten all your gifts weeks ago (like a responsible, smart adult lol) or you’re scrambling to get some last minute shopping done (like me). As a result, traffic becomes more of a hassle, people can become more unbearable, and you become Ebenezer Scrooge! Before you become this negatively-spirited Christmas icon, remember all the wonderful and magical things about the holidays…primarily all the yummy food and sweets!

In my case, I grew up celebrating Christmas and when I was little, my favorite part of this time of year was baking some chocolate chip cookies for Santa Clause the morning of Christmas Eve. Obviously, Santa had many stops to make and a plethora of cookies to eat, so we’d keep most of the cookies for us to enjoy and leave out just enough to satisfy his belly. Nowadays, the chunky old man munches on my decadent, vegan chocolate chip cookies and I bet you he can’t even tell the difference!

Ingredients:          36 COOKIES

Cookie dough 4 (1 of 1)

  1. Preheat oven to 350°F
  2. Mix flour, baking powder, baking soda, and salt in a large bowl
  3. Mix coconut oil, sugar, and brown sugar in a separate bowl
  4. Add almond milk and vanilla to oil/sugar mixture
  5. Combine with dry ingredients and mix until looks and feels like cookie dough
  6. Add chocolate chips and mix until evenly spread throughout the dough
  7. Drop dough by tablespoonfuls, two inches apart onto a greased cookie sheet
  8. Bake for 10-11 minutes if you want soft, gooey cookies, or 12-13 minutes if you want crunchy edges
  9. Let cool for 5 minutes
  10. Enjoy with a glass of cold almond milk for best, traditional experience!

This simple, classic cookie is what I live for and have to be careful not to eat them all in one sitting! Make some today or tomorrow morning in time for Noche Buena, or for Christmas morning as the gift exchange commences. There is no happier moment for a kid (and let’s be honest, adults as well) than opening gifts while chowing down on a chocolate chip cookie followed by a swig of (almond) milk!
